Ingredients
For the Besan-Mawa Mix:

For the Rice:
- 1 cup basmati rice (soaked for 30 minutes)
- 2 cups water

- A few saffron strands soaked in 2 tbsp warm milk
- 1 tbsp rose water (optional)

Method
Step 1: Cook the Rice
- In a deep pot, boil water with bay leaf, cloves, cardamom, and salt.
- Add soaked rice and cook till 90% done.
- Drain and keep aside.
Step 2: Prepare the Besan-Mawa Mixture
- In a pan, heat ghee and roast besan on low flame till it turns golden and aromatic.
- Add crumbled mawa and mix well.
- Add sugar (if using), cardamom powder, and a pinch of salt.
- Stir for 2–3 minutes until everything combines into a thick mixture. Let it cool slightly.
Step 3: Assemble the Biryani
- In a greased biryani pot, spread one layer of rice.
- Add a layer of besan-mawa mixture.
- Sprinkle some fried onions, dry fruits, rose water, and saffron milk.
- Repeat layers and finish with rice on top.
- Drizzle some ghee and cover with a tight lid.
- Cook on dum (low heat) for 10–12 minutes.
