For Thepla Dough:
- 1 cup whole wheat flour
- 2 tbsp besan (gram flour)
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 tsp ajwain (carom seeds)
- Salt to taste
- 2 tbsp curd
- Water as needed
- 1 tbsp oil (for kneading)
For Mango Masala Stuffing:
- 1 ripe mango, thinly sliced or chopped
- 1 small boiled potato, mashed
- 1 green chili, finely chopped
- 1 tsp chaat masala
- 1/2 tsp roasted cumin powder
- Black salt to taste
- Fresh coriander leaves, finely chopped
- A squeeze of lemon juice
Instructions
Step 1: Prepare Thepla
- In a mixing bowl, combine wheat flour, besan, turmeric, chili powder, ajwain, salt, curd, and water. Knead into a soft, pliable dough.
- Rest the dough for 15-20 minutes.
- Roll out thin theplas and cook them lightly on a hot tawa with minimal oil. Keep them soft, not crispy.
Step 2: Make the Stuffing
- In a bowl, mix mashed potato, chopped mango, green chili, chaat masala, cumin powder, black salt, coriander, and lemon juice.
- Make sure the stuffing is well-balanced—tangy, spicy, and slightly sweet.
Step 3: Assemble Sushi Rolls
- Lay one thepla flat on a clean surface.
- Spread the mango masala mixture evenly.
- Gently roll the thepla into a tight log.
- Wrap it in cling film and chill for 15 minutes to firm it up.
