Imagine the traditional Gujarati thepla reinvented into a sushi-style roll, filled with ripe mangoes and a spicy masala mixture. This fusion snack is not only creative but also packed with taste and perfect for summer gatherings, potlucks, or even as a lunchbox surprise.

Ingredients

For Thepla Dough:

  • 1 cup whole wheat flour
  • 2 tbsp besan (gram flour)
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp ajwain (carom seeds)
  • Salt to taste
  • 2 tbsp curd
  • Water as needed
  • 1 tbsp oil (for kneading)

For Mango Masala Stuffing:

  • 1 ripe mango, thinly sliced or chopped
  • 1 small boiled potato, mashed
  • 1 green chili, finely chopped
  • 1 tsp chaat masala
  • 1/2 tsp roasted cumin powder
  • Black salt to taste
  • Fresh coriander leaves, finely chopped
  • A squeeze of lemon juice

Instructions

Step 1: Prepare Thepla

  1. In a mixing bowl, combine wheat flour, besan, turmeric, chili powder, ajwain, salt, curd, and water. Knead into a soft, pliable dough.
  2. Rest the dough for 15-20 minutes.
  3. Roll out thin theplas and cook them lightly on a hot tawa with minimal oil. Keep them soft, not crispy.

Step 2: Make the Stuffing

  1. In a bowl, mix mashed potato, chopped mango, green chili, chaat masala, cumin powder, black salt, coriander, and lemon juice.
  2. Make sure the stuffing is well-balanced—tangy, spicy, and slightly sweet.

Step 3: Assemble Sushi Rolls

  1. Lay one thepla flat on a clean surface.
  2. Spread the mango masala mixture evenly.
  3. Gently roll the thepla into a tight log.
  4. Wrap it in cling film and chill for 15 minutes to firm it up.
  5. Cut into bite-sized sushi-like pieces using a sharp knife.
